Sancocho de gallina is a flavorful chicken casserole popular all over Central and South American cuisine. This name is bound to appear more than once and the list of ingredients will reflect the region.
Ingredients
- 750 gm stewing hen, cut up
- 1 large onions
- 2 ripe tomatoes
- 2 green peppers
- 4 garlic cloves, mashed
- 3.5 cold water
- 500 gm yucca
- 2 medium size potatoes
- 3 green plantains
- 250 gm zapallo (pumpkin)
- 3 ears of tender corn
- 450 gm potatoes
- salt & pepper
- Coriander & parsley
Directions
- Cook the hen in the cold water and all the herbs, and salt and pepper, slowly (over a very low heat or in a slow cooker)
- Chop the onions, tomatoes and peppers while hen is cooking. Add to the pot (or slow cooker) along with the garlic.
- Slice the corn and plantains into 1 ½ inches pieces, adding them to the pot.
- Chop the remaining vegetables into medium sized pieces, also adding them to the pot.
- Cook until tender. Salt and pepper to taste.
