Sancocho de gallina from Panama

Sancocho de gallina is a flavorful chicken casserole popular all over Central and South American cuisine. This name is bound to appear more than once and the list of ingredients will reflect the region.

Ingredients

  • 750 gm stewing hen, cut up
  • 1 large onions
  • 2 ripe tomatoes
  • 2 green peppers
  • 4 garlic cloves, mashed
  • 3.5 cold water
  • 500 gm yucca
  • 2 medium size potatoes
  • 3 green plantains
  • 250 gm zapallo (pumpkin)
  • 3 ears of tender corn
  • 450 gm potatoes
  • salt & pepper
  • Coriander & parsley

Directions

  • Cook the hen in the cold water and all the herbs, and salt and pepper, slowly (over a very low heat or in a slow cooker)
  • Chop the onions, tomatoes and peppers while hen is cooking. Add to the pot (or slow cooker) along with the garlic.
  • Slice the corn and plantains into 1 ½ inches pieces, adding them to the pot.
  • Chop the remaining vegetables into medium sized pieces, also adding them to the pot.
  • Cook until tender. Salt and pepper to taste.
